Along each of the four wooden walls of the smokehouse are racks and
shelves.  Hanging on the racks are various meats from venison to beef and
pork.  Each strip or slab has already been cured and is slowly being smoked
by the small iron stove found at the center of the room.  Under the racks,
at about waist height are the preparation tables where meat is salted and
spiced before being hung to dry.  Further cramming the room with products
are the hooks secured to the ceiling that hold further chunks of smoking
meat.  Completing the little room is the lazy puffs of smoke emitted by the
stove as it burns its scented and flavored wood.
